3.2.1. Mug Cake


To make this, you need to combine two specific boxes of dry cake mix, which you can store in a large Ziploc bag or air tight container in your pantry for future cravings: 
  • 1 box Angel Food cake mix (This is mandatory, as its specific leavening agents replace the need for eggs or oil).
  • 1 box of any other flavor cake mix (e.g., Devil’s Food, Yellow, Funfetti, or Lemon). 
How to Prepare a Serving
When you are ready for a quick treat:
  1. Combine: In a microwave-safe mug or small ramekin, mix 3 tablespoons of your combined dry mix with 2 tablespoons of water.
  2. Stir: Stir thoroughly until the batter is completely mixed (it may get slightly foamy).
  3. Microwave: Microwave on high for exactly 1 minute.
  4. Serve: Let it cool slightly, then enjoy it straight from the mug or top with whipped cream, frosting, or chocolate chips

Freebie Friday......

~Waffle Pizza Bites~


2-3 cans of Pillsbury Crescent Rolls
Pepperoni
grated cheese
hamburger - browned (optional)
pizza sauce (for dipping)

Preheat waffle iron.
Open crescents and pull apart into triangles.  On the wide end place the burger, pepperoni and cheese. Fold all the points in bests you can ... sealing it all up into a pocket. Place four pockets on waffle iron and cook for a few minutes until brown and done.
 TahDah..... you're done.
Serve with Pizza Sauce for dipping

YUMMY!!!

Freebie Friday.......



ONE HOUR CINNAMON ROLLS

This recipe will yield 24 regular size rolls or around 12 HUGE rolls. I like mine huge, lol! Cut recipe in half for l...ess.

~3 1/2 cups of warm water
~3/4 sugar
~1/2 cup of oil (vegetable is fine)
~6 tablespoons of quick rise yeast
~1 tablespoon of salt
~3 eggs
~10 1/2 cups of all-purpose flour (yes, that's right, lol)

CINNAMON SUGAR
~1 cup of sugar
~1 Tablespoon of cinnamon

FROSTING
~1/2 cup of butter
~2 dashes of salt
~2 teaspoons of vanilla extract
~6 cups of powdered sugar
~milk (as needed)
**An additional 1/2 cup of butter is needed (separated in half for each half of dough) for spreading on dough with cinnamon sugar.
**Make a double batch of frosting if you like a lot of it.

1.) Mix first 4 ingredients together (water, sugar, oil, yeast) and let sit for 15 minutes.

2.) Then add the salt, eggs and flour. Mix together for 10 minutes, then let sit for 10 minutes.

3.) Oil counter or cutting board and dump out dough. Divide dough in half.

4.) Roll out one half into rectangle. Spread with 1/4 cup melted butter and then half of cinnamon sugar mixture.

5.) Roll up tight, but not too tight.

6.) Divide into 12 rolls and place on greased cookie sheet. Let rise on cookie sheet for 10 minutes. Cut dough in half, cut halves in half, etc.

7.) Repeat with other half of dough.

8.) Bake for 12-15 minutes at 400 degrees.

Freebie Friday...........


Taco Ring Bake

Ingredients:
1 lb. ground beef
1 package (1.25 oz) taco seasoning mix
1 c. (4 oz) shredded cheddar cheese
2 tbs water
2 8-oz packages refrigerated crescent rolls
1 medium green bell pepper
1 c. salsa (optional)
3 c. lettuce, shredded (we used more — ¾ a head)
1 medium tomato, diced
¼ c. onion, chopped
½ c. pitted ripe olives
sour cream
Directions:
–Preheat oven to 375°. Brown the ground beef, then drain. Add taco season and simmer
–Unroll the crescent dough; separate into triangles. Arrange triangles in a circle on a pizza pan with the wide ends toward the center of the pan, overlapping each other. It will look like a large sun with the points hanging half off the pan. There should be a 5 or 6 inch opening in the center.
–Spoon the meat mixture evenly onto widest end of each triangle. Bring points of triangles up over filling and tuck under wide ends of dough. (Filling will not be completely covered).
–Bake 18-22 minutes or until golden brown.
–Shred lettuce, dice tomato, onions, olives, green pepper, and whatever other items you want to put inside. Place them in center of the taco ring and use that as your toppings!

Summer will be here soon............. I promise!
So here is something fun.... and useful.  
Freeze your favorite juice... this one is Lemonade.  Toss a bunch in your cooler and take them to Baseball games... the pool... the park... etc.   They will keep whatever else is in your cooler cold... and when you are ready to enjoy one... take it out .... squeeze it a bit to make it slushy and enjoy.  :)

Lemon Cake Bars

1 box one step Angel Food Cake mix
1- 15oz can Lemon Pie filling


















Fold Lemon and Cake mix together until moist.  Be sure not to over stir.
Bake in a 9x13 cake pan at 350* until golden brown on the top (about 20-30 minutes).
Cool completely before eating.
As they are cooling, you can sprinkle with powder sugar if you wish.
They have more of an angel food cake texture than a traditional lemon bar texture.

Freebie Friday..........

Meatball Bubble Biscuits

2 cans of Pillsbury Grands (8 biscuits in each can - 16 total)
16 frozen meatballs - thawed
16 slices of pepperoni
1 cup or so of grated cheese of you liking.

Preheat oven to 350*
Spay 9x13 pan with cooking spray.
Open one can of biscuits.... place a pinch of cheese on center of one biscuit... place pepperoni next... then meatball. Pull up sides to encase the cheese ...pepperoni and meatball in the biscuit. Pinch all the seems real good and place seem side down in pan. Do this to the remaining 15 biscuits.
Bake for 20-30 min... until golden brown!

Serve with marinara sauce... or bbq sauce.. or ketchup/mustard
YUM!

Java-Glazed Cinnamon Rolls

1 can (17.5 oz) Pillsbury® Grands!® refrigerated cinnamon rolls with cream cheese icing (5 rolls)
2 tablespoons milk
1/4 teaspoon instant coffee granules or crystals
1/2 cup Hershey’s® premier white baking chips
1/2 cup Fisher® Chef's Naturals® Chopped Pecans


DIRECTIONS
1 Heat oven to 350°F. Spray 9-inch round cake pan with Crisco® Original No-Stick Cooking Spray. Place cinnamon rolls in pan; reserve icing. Bake 20 to 25 minutes or until golden brown. Cool slightly.

2 Meanwhile, in small microwavable bowl, microwave 1 tablespoon of the milk uncovered on High about 20 seconds or until hot; stir in coffee granules until completely dissolved. Stir in reserved icing. Microwave uncovered on High 25 seconds. Stir in baking chips and remaining 1 tablespoon milk. Microwave 25 seconds longer; stir until chips are completely melted. (Microwave in additional 10-second increments, if necessary, until chips are melted.)

3 Stir pecans into icing mixture. Pour over rolls. Serve warm

Freebie Friday..........



Pumpkin Crisp

Prep: 15 min.; Bake: 1 hr., 5 min.; Stand: 10 min.

YIELD: Makes 8 to 10 servings

Ingredients
1 (15-ounce) can pumpkin
1 cup evaporated milk
1 cup sugar
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1 (18.25-ounce) package butter-flavored yellow cake mix
1 cup chopped pecans
1 cup butter, melted
Whipped Cream (optional)
Ground nutmeg (optional)

Preparation

Stir together first 5 ingredients. Pour into a lightly greased 13- x 9-inch baking dish. Sprinkle cake mix evenly over pumpkin mixture; sprinkle evenly with pecans. Drizzle butter evenly over pecans.
Bake at 350° for 1 hour to 1 hour and 5 minutes or until golden brown. Remove from oven, and let stand 10 minutes before serving. Serve warm or at room temperature with Whipped Cream, if desired. Sprinkle with nutmeg, if desired

Freebie Friday..........

Diet Coke Cake......



This is a simple... yet VERY yummy cake recipe! Its so moist you don't even need to frost it if you don't want. You can use any diet soda.... and if you want to have fun... use a white cake mix. Diet Orange soda and a white cake.... yum. :)


This is a great recipe for those that are dieting and those that have a dairy allergy. No eggs... no milk.


Ingredients...........

1 box cake mix (your choice of chocolate or white)

1 can of diet soda (your choice of flavor) 12oz


In mixing bowl... mix cake mix and soda.

Grease and flour 9x13 cake pan.

Pour cake batter in pan... you will need to spread it out as it is thick.

Bake at 350* for 30-35 min.

Let cool and enjoy!

Topping ideas...........

~regular icing

~powdered sugar glaze using same flavor diet soda and powdered sugar

~sprinkle with simple powdered sugar

~dollop with cool whip or whip topping of your choice.

Snowed in Breakfast Casserole.....

This is what you do with a handful of eggs... some left over bacon and sausage and tator tots.... when you're snowed in and need to find things to make for meals to feed 7 people.


6 eggs
1/2 cup milk (maybe a bit more if you like)
left over bacon.... approx. 8 pieces
left over sausage patties... approx. 4-5
left over tator tots.... enough to cover the bottom of a 9x13 pan
grated cheese

Preheat oven to 350*
Spray 9x13 pan with cooking spray
layer bottom of pan with frozen tator tots..... cook bacon and sausage.... and cut both in to small pieces..... sprinkle half of the bacon and sausage on top of the tator tots.
In bowl... mix eggs and milk unitl whipped well..... pour egg mixture on top of tots.. bacon & sausage. Sprinkle remaining bacon/sausage on top of egg. Sprinkle with grated cheese.... bake in oven 20-30 minutes until golden brown.

*more cheese
*syrup

HOMEMADE PANCAKE MIX

10 c. all-purpose flour (3 lbs.)
2 1/2 c. instant nonfat dry milk
1/2 c. sugar
1/4 c. baking power
2 tbsp. salt

Combine all ingredients in a large bowl. Stir together to blend well. Put in a large airtight container. Label. Store in a cool, dry place. Use within 6 to 8 months. Makes about 13 cups of pancake mix. This mix works for both waffles and pancakes.


TO MAKE PANCAKES OR WAFFLES:

2 c. homemade pancake mix
1 c. water
1 egg
2 tbsp. oil (waffles - 3 tbsp.)

Beat smooth with a wire whisk or fork. This makes eight (4 inch) pancakes or four large waffles.

Here is our syrup recipe: (Better than "store bought".) 1 1/2 c. water 1 tsp. vanilla 1/4 c. pure maple syrup
Combine ingredients in a saucepan and bring to a boil. Boil gently until sugar is completely dissolved. Store in tightly covered container in the cupboard. Keeps indefinitely.

To make pecan waffles, sprinkle chopped pecans on the batter just before closing the waffle iron. For strawberry waffles, top hot waffle with fresh or thawed frozen strawberries and whipped cream.

Homemade Rhubarb Pie................... by Patrick


Yep.......... Patrick made this very YUMMY pie. He and David went out to the Rhubarb patch in the yard and picked just enough for a pie.
I cleaned the Rhubarb and Patrick did the rest.

Recipe.............

1 - double crust Pillsbury Pie crust
5 - cups chopped rhubarb
1 1/2 cups sugar
5-6 tablespoons flour
4-5 tablespoons butter

Preheat oven to 450*
Mix sugar and flour together.
Roll out bottom pie crust into pie plate. Sprinkle 1/4 of the sugar/flour mixture into bottom of pie .... place chopped rhubarb in pie.. sprinkle rest of sugar/flour mixture on top of rhubarb... dot rhubarb with butter. Place top pie crust over top... securing the edges and cutting of excess crust around the edges. cut a few slits in the top crust for venting. Place in oven on low rack.
Bake for 15min. Reduce temp to 350* continue cooking for 40-45min.

Let cool.......... enjoy warm or cold!

Four-Layer Dessert

1 cup flour
1/2 cup finely chopped PLANTERS Slivered Almonds
1/4 cup (1/2 stick) margarine, melted
1 pkg. (8 oz.) PHILADELPHIA Fat Free Cream Cheese, softened
1/2 cup powdered sugar
2 cups thawed COOL WHIP Sugar Free Whipped Topping, divided
3 cups cold fat-free milk
2 pkg. (4-serving size each) JELL-O Fat Free Sugar Free Instant Pudding, any flavor

HEAT oven to 350ºF. Mix flour, nuts and margarine; press onto bottom of 13x9-inch pan. Bake 15 min. or until lightly browned. Cool.
BEAT cream cheese and sugar with mixer until well blended. Stir in 1 cup COOL WHIP; spread over crust.
BEAT milk and pudding mixes with whisk 2 min.; spread over cream cheese layer. Top with remaining COOL WHIP. Refrigerate several hours or until chilled.
Servings........ 12
Calories per serving.........200

Freebie Friday.........

Crazy Quick Cherry Cobbler

Ingredients:
1 can Cherry Pie filling (or fruit pie filling of your choice) **2 cans can be used for the fruit lover**
1 box yellow cake mix
1 stick butter

Preheat oven to 350*.
Spray 8x8 pan with cooking spray.
Pour entire can of pie filling in bottom of pan
Sprinkle dry cake mix evenly on top of pie filling.
Cut butter in slices and arrange evenly on top of dry cake mix
Cover with foil. Place in oven and bake for 50-60 minutes.
Remove foil and place out to cool. Serve warm or cold.


To double this for a 9x13 pan...........

3 cans pie filling
1 1/2 cake mix
2 sticks of butter

prepare same as above... but baking time will need to be 90 minutes or so.
you can take the foil off at the 90 minute point to check ... if its not a nice golden brown all over you can leave it in uncovered until it browns.

CAKE MIX COOKIES

1 box any flavor cake mix
2 eggs
1 stick margarine or butter

Cream Margarine, add eggs and mix well. Stir in cake mix, add additional ingredients (chocolate chips, crushed candy bar etc.) Bake in a 350 degree oven on ungreased cookie sheet for approximately 8 to 10 mins. Great for a quick gift giving idea. Easy for kids to mix and they are delicious!

When I was growing up there were many heroes to admire, such as Wonder Woman, Superman, and Lassie, the dog wonder. There was always someone to look up to, whether they were a family member, teacher, or a great fiction character. The people who we admired inspired us to be better, reach higher, and to achieve the impossible. Today, however, I can’t help but wonder, “Where have all the heroes gone?
Standing in line the other day with the end of my Christmas shopping...I was glancing at all the tabloids.... so many of those Hollywood stars have become heros in so many eyes.. and to see the sad stories of their drug filled... abusive lives... with constant run ins with the law .. is just heartbreaking.
I found myself questioning again, “Where have all the heroes gone? Isn’t there anyone we can look up to anymore?”You’ve probably experienced the same kind of let down at some point in your life. Perhaps it was a family member, a friend, or even a Christian leader who disappointed you and led to question, “Is there anyone I can truly trust?” Yesterday while reading a news story.. I was lead to a related older story....A family had been stranded on a rural, snow-covered road in Oregon after spending Thanksgiving with family. The father, attempting to save his family, set out on foot to look for help. The mother and her two young daughters stayed behind. To survive the cold, she burned all four tires, including the spare in the trunk of the car. She nibbled Thanksgiving leftovers and sustained her daughters with breast milk.Days later, an airplane flying above saw the father’s footprints in the snow and landed to investigate. They found and rescued the mother and the two young girls. Immediately a search began in the snow-covered mountains for the missing father, but they were too late. The cruel winter weather had claimed his life while he desperately tried to save the lives of his family.
I sat there and said to myself, “There’s a hero. Anyone who loves another in such a way that they are willing to give their own life to save another is a hero.” I also thought about those two little girls who will never have to question if there are any heroes left in the world. Their father will always be their hero.
You and I have been loved in the same way. We, too, have a hero. His name is Jesus Christ. Knowing that we live in a fallen, broken world, Christ left His heavenly home and all the comforts there. He took off His royal crown and laid aside His position to come and rescue us from sin and death. Why? Because of His love for us. In Christ’s heart you and I were worth dying for. Jesus willingly gave His life so that we may live. There is no greater love than that!
In this world people may disappoint us from time to time, but remember: We’ll always have the love of our heavenly Father, the greatest hero of all.
Dear Lord, thank You for loving me enough to lay down Your life so that I may have life as God intended. Teach me to live worthy of Your sacrifice. In Jesus’ Name, Amen.

Double Stuff Freebie Friday...

Oreo Cookie Scarf...



This is really simple.
You can use any scarf pattern you like. I used the shell stitch from my keyhole scarf.

*The oreos are simply 3 round circles each. Two ‘coffee brown’ and one white.
Rnd 1) Ch 3. 12 hdc in 3rd ch from hook. (ch 3 does not count as a hdc) join to form circle in first hdc. (12 hdc)
Rnd 2) ch 2. hdc in same st. 2 hdc in each st around (24 hdc) tie off.
Stack the three circles together… sew them together through all three.

*Bitten Cookie…
Create in same manner as full cookies leaving last 3 sts undone on row 2.

*The glass is a simple rectangle size and color of your choice.
*The milk is a single row of DC the same size as the width of the glass.
Attach the milk to the inside top of the glass.. sew the glass to the scarf stuffing it slightly with some polyfil or scrap yarn. Not too much.. just enough to give it a 3D effect.



Homemade Oreo Cookies...

::Quick and Easy way::

1 package devil's food cake mix - Chocolate or German Chocolate (If you are going to use the German chocolate mix be sure to press cookies to slightly flatten then immediately after removing them from the oven - this will insure a perfectly round cookie)

2 eggs

1/2 cup oil (or butter flavored shortening)

Heat oven to 350 degrees. Roll dough into balls (a little larger than a quarter). Place on greased cookie sheet. Bake for 8 minutes. Remove from oven and let cool on sheet (until warm). Remove cookies from sheet and place on cooling rack.To assemble the cookies, in a pastry bag with a 1/2 inch, round tip (you can always use a zip lock bag with a round tip or just use a butter knife)add about a tablesppon of filling into the center of one cookie. Place another cookie similiar in size on top of the filling. Lightly press, to work the filling evenly to the outsides of the cookie. Continue this process until all the cookies have been sandwiched with cream.

::Oreo cookie filling::

1 stick butter

1 block of cream cheese (8 ounces)

3-4 cups confectioner's sugar (depending on desired consistency)

1 tsp vanilla extract

*cream butter (about 2 mins). Add cream cheese and mix well. Add confectioner's sugar slowly until you reach your desired consistency.

::REAL homemade oreos::

For the chocolate cookies:

1¼ cups all-purpose flour

½ cup unsweetened Dutch process cocoa

1 teaspoon baking soda

¼ teaspoon baking powder

¼ teaspoon salt

1 to 1½ cups sugar

½ cup plus 2 tablespoons (1¼ sticks) room-temperature, unsalted butter

1 large egg

*Set two racks in the middle of the oven. Preheat to 375 degrees.In a food processor, or bowl of an electric mixer, thoroughly mix the flour, cocoa, baking soda and powder, salt, and sugar. While pulsing, or on low speed, add the butter, and then the egg. Continue processing or mixing until dough comes together in a mass.Take rounded teaspoons of batter and place on a parchment paper-lined baking sheet, or greased sheet, about 2 inches apart. Slightly flatten the dough. Bake for 9 minutes, rotating once for even baking. Set baking sheets on a rack to cool. Use filling recipe and directions above.Makes 25 to 30 sandwich cookies**Store cookies in fridge**

Freebie Friday..........

APPLE LOAF CAKE


1 1/2 sticks butter
1 2/3 c. sugar
2 eggs, beaten
1 tsp. vanilla extract
2 c. all-purpose flour
1 1/2 tsp. cinnamon
1/4 tsp. salt
1 tsp. baking powder
2 c. peeled and chopped apples (I like lots of apples.. so you can add another cup or so)
Optional: 1 c. chopped nuts and 1 c. raisins or chopped dates


Cream together butter, sugar, eggs and vanilla until light and fluffy. Sift together the dry ingredients. Add to butter mixture then add apples, nuts and raisins. Pour (scoop) into two greased and floured loaf pans. Bake in a preheated 350 degree oven for 35-45 minutes or until tests done. (This is a very moist cake.)
